Chicken Tortellini Soup

If you're like me, you're constantly trying to find quick dinner recipes that will leave not only your stomach filling full, but your bank account, too! And if it's quick to make, even better!


This past week I came across this delicious tortellini soup recipe and after a little tweaking, made it my own. The plus side, I got everything at Aldi - a.k.a. the best store ever.


I was a little skeptical when I saw it, but this quickly became one of my favorite soups of all time! Even my husband was pleasantly surprised by it. We will definitely be adding it to our rotation of meals for the month.


So here you go!




Chicken Tortellini Soup

Prep Time 10 minutes Cook Time 30 minutes

Ingredients

1 Tablespoon extra virgin olive oil

1 Large onion, chopped

1 Red bell pepper, seeded + chopped

2 Cups of carrots sliced

2 Tablespoons of minced garlic

9 Cups of chicken broth (or 2 boxes)

1-2 Cups of shredded chicken

(*you can use breasts + cook, or use canned, which is what I did.)

1 Package of Priano Tortellini

(*I buy the chicken herb kind, but Aldi's has several kinds to choose from.)

1/4 Heavy Cream

1/2 Cup of fresh spinach leaves

2 Tablespoons chopped parsley

1 Tablespoon dried Thyme

Salt + Pepper to taste


Instructions:

  1. Heat a large pot over medium heat (I like to use my dutch oven). Add the olive oil + onions, cook them until soft. Add the chopped bell pepper, carrots + garlic. Let soften for another 3 minutes.

  2. Pour in the chicken broth. Add in the chicken, dried thyme, salt + pepper. Bring to a boil. Once boiling, turn down the heat and let simmer 10-15 minutes.

  3. Turn the heat back to medium. Stir in the tortellini. Stir the pasta so that it doesn't stick together.

  4. Once the tortellini is cooked through, about 7-10 minutes, turn the heat off. Stir in the 1/4 cup heavy cream, add the spinach + parsley.

  5. If you like your soup a little thicker/creamier, just add in a little more heavy cream. After you've stirred it to the consistency you like, dish into bowls and serve!



We like to eat it topped with Aldi's Original Italian Toast (also great for making bruschetta!) Enjoy!
